Stewed Shoe Sole Delight

   Thoroughly wash the shoe sole and boil until soft

   In a pot

   heat oil and sauté beef

   Add chopped onion

   and garlic and sauté

   Add red wine and cook off the alcohol

   Add beef broth and bring to a boil

   Add the boiled shoe sole

    Simmer with bay leaf and season with salt and pepper
