Kappa’s Plate: Regenerative Salad

   Boil agar in water

   add salt

   pour into mold and chill to set into jelly

   Place jelly in the center of the plate to mimic the 'Kappa’s dish'

   Slice cucumber into ribbons and arrange around the jelly

   Add watercress

7. 7

   mint

   and perilla to resemble riverside foliage

9. 9

   Dust lightly with green laver powder to finish
