Inspired by the mythical Kappa’s life-giving 'dish,' this salad centers on a shimmering water jelly surrounded by cucumber ribbons and edible aquatic greens. Said to awaken 'river memories' in those who consume it—just don’t finish it all, or the Kappa might weep.

    Boil agar in water
