| Fresh cream | 100ml |
| Gelatin | 5g |
| Vanilla bean | 1/2 |
| Granulated sugar | 30g |

Dry and pulverize feathers

then charge in espuma canister to create airy foam

Warm milk and cream with vanilla and sugar

then add gelatin to make blancmange mixture

Pour into molds and chill until set

Top chilled blancmange with fluffy feather espuma
