Deep-Fried Stocking in Dashi Broth

The forgotten stocking from your drawer makes a shocking comeback on the plate. Crispy outside, disturbingly textured inside, all drenched in umami-rich dashi—guilt never looked so golden.

Potato starch20g
Cold water80ml
Carrot1
Green beans6
Dashi stock200ml
Soy sauce2 tbsp
Mirin1 tbsp
Frying oilas needed
