Tempur Mousse de Brain

   Cut Tempur foam into 1cm cubes and steam at 60°C for 15 minutes to enhance softness

   Steam artichoke

   scoop the center

   and mix with Tempur cubes

   Place brain-shaped agar in the center and surround with the mix

   Grate blue cheese like snow

   finish with truffle oil and black pepper
