Dried shiitake | 2 |
Stock | 500ml |
Light soy sauce | 1 tsp |
Mirin | 1 tsp |
Mitsuba | a few leaves |

Wash and slice the bamboo shishi-odoshi into 5cm rounds

Soak kombu and shiitake overnight to rehydrate

Simmer bamboo slices in the soaking liquid for 10 minutes

Season with soy sauce and mirin

Serve in bowls with mitsuba garnish
