Shishi-odoshi Silent Broth – Essence of Ma

With every 'thunk' of the bamboo, take a sip. This dish captures the stillness of a zen garden in a bowl. The shishi-odoshi becomes the main ingredient—blending the rhythm of nature with umami in a forbidden fusion soup.

Shishi1
Kombu10g
Dried shiitake2
Stock500ml
Light soy sauce1 tsp
Mirin1 tsp
Mitsubaa few leaves

    Wash and slice the bamboo shishi-odoshi into 5cm rounds

    Soak kombu and shiitake overnight to rehydrate

  3. 3

    Simmer bamboo slices in the soaking liquid for 10 minutes

    Season with soy sauce and mirin

    Serve in bowls with mitsuba garnish
