Scallop Cartafata with Edible Pearl Necklace

Jewels of the sea reimagined on a plate. This chilled scallop cartafata is wrapped in pearl-like gelée spheres, resembling a luxurious necklace. A bite releases the aroma of the ocean in the most elegant way.

Scallops2 pieces
White dashi30ml
Water100ml
Agar3g
Lemon juice1 tsp
Edible pearl powderas needed
Chervila pinch

作り方

    Warm white dashi with water and dissolve agar

    Let cool slightly

    then add lemon juice and edible pearl powder

    Pour into hemispherical molds and place a scallop in the center of each

    Chill until set and arrange the spheres in a necklace shape

    Plate on clear glass with chervil for a jewel-like presentation
