Mermaid’s Tear Jelly

This stunning jelly captures the sorrowful tears of a mermaid, wept in the darkest depths of the sea. Was it heartbreak, or was she rejected by a sea urchin? We may never know. One thing is sure: a hint of 'melancholy from the air' gives it a hauntingly sweet finish.

材料

Blue Curaçao syrup30ml
Agar powder4g
Water300ml
Sugar40g
Lemon juice5ml
Melancholy from the aira pinch
Edible pearls3 pieces

作り方

    Heat water in a pot and dissolve agar completely

    Add sugar and Blue Curaçao syrup and mix well

  3. 3

    Add lemon juice and a pinch of melancholy from the air then remove from heat

  4. 4

    Pour into mold and sink edible pearls

  5. 5

    Chill in fridge for 2 hours until set

  6. 6

    Plate and decorate with blue rock salt or similar
