Chilled Eye Mask Carpaccio Style

Three eye masks, three kinds of tears and aromas—now laid bare on a forbidden cold plate. What once shielded your eyes now seduces your tongue.

Soaked eye masks3 pieces
Herb vinegar2 tbsp
Scallops2 pieces
Rosemary1 sprig
Lemon zesta pinch
Charcoal salta pinch

    Slice the soaked eye masks lengthwise and chill in ice water

    Slice scallops thinly and lightly sear

    Arrange masks and scallops alternately on a plate and mist with herb vinegar

    Smudge rosemary over charcoal and wave over the plate for aroma

    Finish with lemon zest and charcoal salt
