| Risotto rice | 150g |
| Chicken stock | 500ml |
| White wine | 100ml |
| Parmesan cheese | 100g |
| Onion | 1 |
| Olive oil | 2 tbsp |
| Salt | pinch |
| Pepper | pinch |

Finely chop the onion

Heat olive oil in a frying pan and sauté the onion

Add the earthworms and sauté

Add white wine and let the alcohol evaporate

Add the risotto rice and lightly sauté

Gradually add chicken stock and simmer until the rice becomes soft

Add and mix in the Parmesan cheese

Season with salt and pepper

Garnish with parsley if desired
